Riderwood’s award-winning chefs will give a multi-cuisine cooking demonstration of three delicious recipes (see them listed below) on Saturday, August 29th , at 11 a.m., at the Olney Farmers and Artists Market, which is located at Route 108 and Prince Phillip Drive, next to the Montgomery General Hospital Thrift Shop. The chefs – Executive Chef Victor Cirrincione, Chef de Cuisine Marta Munoz and Chef de Cuisine Frank Clyatt — are the defending winners of the Maryland Seafood Festival’s “Best Vegetable Crab Soup” recipe. They will cook Capellini (or Angel Hair Pasta), Sautéed Garden Vegetables and Escarole & Beans with Pasta at the Olney event.
The Dining Services team at Riderwood is composed of 600 employees who, under the direction of Magdy Mishraky, comprise an operation of 18 on-campus restaurants featuring a wide variety of dining experiences from formal to casual for residents. The Dining Services team also includes a catering group that creates menus and prepares appetizers, meals and deserts for special events such as wedding receptions and private parties.
After successfully training at Adirondack Community College, Chef Victor enjoyed a stellar career at many popular dining venues. Some of these fine establishments include the Sagamore Resort in New York, the Equinox Hotel in Vermont, the Boar’s Head Inn, the Kingsmill Resort and the Inn at Little Washington, which is a 5-Star, 5-Diamond Inn.
Chef Victor says, “Honesty is the most important quality a good chef can have. A chef who can stand by his product,
(good or bad), admit to his faults, be humble with his successes, and recognize those who helped make him successful is a chef who will have a promising career. At Riderwood, I enjoy the interaction I have every day with the people I serve. They’re really a joy to be around."
Chef Marta is a motivated, passionate leader with about 19 years of experience in the Restaurant / Food Service Industry. She has wonderful epicurean experiences from Chadwick’s Restaurant and J. Paul’s Restaurant. Her attention to detail, including presentation and quality, guides her creative menu planning and implementation. Her overall gift of Culinary Artistry is outstanding. Chef Marta has been with Riderwood for the past 7 years, and she values customer satisfaction and upholds the Dining Mission to consistently exceed residents’ expectations.
Chef Frank has worked with Riderwood since 2004. He attended L’ Academie de Cuisine where he furthered his knowledge in the culinary field. He gained a lot of experience with cooking while working at Royal Mile. There he shadowed the Owner/Chef who attended Johnson & Wales and learned valuable knowledge that molded him into the chef he is today. Chef Frank started at Riderwood as a line cook and within a year moved up to Lead Cook (Sous Chef), and within a year was promoted to Chef de Cuisine at the Overlook Restaurant at Riderwood. Chef Frank currently serves as the Chef de Cuisine at Windsor Restaurant at Riderwood.
